So I've recently made the switch to gluten free. Trust me, this hurts no one more than it does me. I never really craved foods as much as I currently am. It also helps me ZERO that all of my friends have decided to make/eat deliciousness around me. It's depressing, but, my stomach doesn't kill my anymore so that's all good in the hood. Now, to that pancakes. I went on a run the other morning and about mid-run (which was right by a McDonalds) I started smelling and then craving pancakes. For the rest of the way home I kept trying to devise some sort of delicious plan on how I was gonna get these bad boys. What I came up with was nothing short of amazing.

I'm currently living with my mom while I wait for the move in date for my apartment. Lets just say where I'm living isn't exactly health conscious. Finding a place that had the gluten free supplies I'd need was a challenge impossible quest. First place I went, no luck. Second place I went boom I stumbled upon GLUTEN FREE BISQUICK. Now I grew up in the middle of no where. There was a wheat field across the street and my grandparents lived on a farm where I spent a lot of my time growing up. My grandma showed me the wonders of bisquick. The fact that I found Gluten free gave me a glimmer of hope. I snagged the box and went home to create. Now, what I hadn't noticed until about pancake 4 that we had bacon and we had chocolate chips. So I threw 2 pieces of bacon in the pan and then cut them up into the batter and threw in a handful of chocolate chips. This was the best decision possible. I ate so many freakin' pancakes it's embarrassing to share the exact number.
I don't exactly have the recipe but here's a sort of one I guess.
Bisquick (gluten free or regular)
-1 cup mix
-1 egg
-1 cup milk
-2 TBS veg. oil
mix it all up.
-however many slices of bacon tickle your fancy
-same with the choco chips
BOOM PANCAKES.
